Miss Monkey is not a sports type girl (at least yet) so many of the summer camps didn’t really interest her. Until she found the “Kids Can Cook” camp.
She was hooked and I was totally game…I mean who would turn down and opportunity for her child to cook dinner for the week.
Her first day, she brought home marinated chicken and vegetable skewers. After marinating for the afternoon, all I had to do was pop the skewers pan in the oven and bake for 20 minutes. EZPZ.
And. They. Were. DELICIOUS!
Day 2: Cheeseburger Pie (Mr. B’s favorite of the week)
Day 3: Pasta Primavera
Day 4: Veggie Pizza (complete with decorated pizza box)
My favorite meal, by far, was the Marinated Chicken Skewers. It was a very flavorful and healthy dinner…one that I will be adding to my cooking repertoire for sure.
Ingredients:
1/4 cup lemon juice
1/4 cup olive oil
1/4 cup soy sauce
1 teaspoon dried oregano
3 cloves garlic, minced
pineapple chunks
1 chicken breast, cut in cubes
2 onions, cut in chunks
2 red or green bell peppers, cut in chunks
1/2 cup zucchini
wooden skewers, soaked in water before using to prevent burning
Method:
Add lemon juice, olive oil, soy sauce, oregano and garlic in ziploc bag. Add chicken cubes, and onion and pepper chunks. Seal and marinade in the fridge overnight or for several hours. Place meat and vegetables on skewers. Grill or heat in a 400 degree oven for 20 –30 minutes. Serve with rice or couscous.
Trust me, you NEED to try this. It’s so easy and SO delicious.
And Miss Monkey has already asked if she can sign up for cooking camp again. Score!
